No Sugar Granola

This is genuinely a great recipe. You can use whatever nuts and seeds you enjoy it in, so it is tailored to your tastes. And it is way cheaper to make this than buy shop bought granola. The nutritional information will vary depending on what nuts and seeds you choose, but the information will be roughly right.
In essence, you choose 300g of your favourite nuts and seeds and 400g of oats. It's very easy to make and tastes delicious.
Be aware that because it contains lots of nuts and seeds, it is quite calorific, so if you are looking to lose weight you won't want to eat massive bowls of this (believe me it is easily done!) But a tablespoon or two sprinkled on yoghurt and fruit or just eaten on it's own as a snack, gives you a bit of protein and a nice kick of calcium (especially if you include sesame seeds).

Ingredients

  • 3 tbsp coconut oil Or any oil of your choice. This is 3 level tbsp or 2 heaped tbsp.
  • 1 tbsp xylitol
  • 75 g unsalted almonds Or any other nuts you wish
  • 75 g unsalted cashew nuts Or any other nuts you wish
  • 75 g unsalted pecan nuts Or any other nuts you wish
  • 50 g pine nuts Or any other nuts you wish
  • 15 g sunflower seeds Or any other seeds you wish
  • 15 g sesame seeds Or any other seeds you wish
  • 400 g gluten free organic oats

Instructions

  • Any large nuts need to be smashed to smaller pieces. You can either do this by hand in a pestle and mortar or in a food processor with short bursts of power for a 3 seconds only at a time, until desired consistency is reached.
  • Preheat the oven at 150°C/300°F.
  • In a very large pan, melt the oil and stir in the xylitol to melt in the oil.
  • Poor the oats into the pan first and then the nuts quickly on top. And stir as quickly as possible. Keep stirring until all the ingredients are covered in the oil mixture.
  • Then spread over 2 large baking trays, making the layer as thin as possible.
  • Place in the oven for 20 minutes.
  • Then remove both trays and stir them. The outer edge tends to brown off faster than the middle. So bring all the edge pieces to the centre and the centre pieces to the edge.
  • Place back in the oven for another 15 minutes.
  • Now check to see whether it is crunchy enough. If it isn't, keep adding it back into the oven for 10 minutes at a time until it is crunchy. If it is, take it out to cool (although it is also soooo good hot) and store in an airtight container for when you want it.

Notes

I've assumed one serving is a heaped tbsp = 30g.
Other nice ingredients you can add into the mix are cacao nibs or coconut flakes, or quinoa flakes. Or even a little grated dark chocolate tastes amazing in this.
The reason I don't add dried berries is that they are high in sugar. But if you wanted to add some acai powder to get a berry flavour, that would be good as it is not sugary and contains a huge amount of antioxidants. Or add fresh berries to get that berry flavour. You can't beat fresh food!!!

    One of my favourite ‘Go To’ recipes. Use whatever nuts and seeds suit your body. So much flexibility.
